Cranberry Turkey Meatballs
Please roast instead of fry
*note all measurements are approximate and you should use your judgment depending on your tastebuds*
Preheat oven to 350 degrees
ground turkey breast (approx. 1 lb)
2 tbspns of dried cranberries (soak in water or preferably chicken broth - to plump)
toast 1 tbspn of pignolia nuts in dry pan
fresh italian parsley (chopped)
grated parmesan or romano cheese (1/2 cup)
fresh garlic (at least 3 cloves) use garlic press
salt and pepper
seasoned bread crumbs
chicken broth for moisture
dried cranberries
Mix all above ingredients together until combined
DO NOT OVERMIX
grease cookie sheet lightly with olive oil
to form meatballs evenly use ice cream scoop
drizzle olive oil on top of meatballs
place in oven and roast 30-40 minutes (time varies with individual oven)
this is low fat and delicious please try it tonight
